Ingredients
  

  • 1.5 lb chicken breast cut into pieces
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 yellow onions thinly sliced
  • 3 cloves garlic minced
  • 1 tsp thyme
  • 1.5 cups orzo uncooked
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1.5 cups Gruyère cheese shredded
  • 0.5 cup parmesan cheese grated

Method
 

  1. Caramelize onions slowly in butter and olive oil.
  2. Season and lightly sear chicken.
  3. Combine chicken, orzo, onions, broth, and cream in baking dish.
  4. Cover and bake until orzo is tender.
