Ingredients
  

Coleslaw
  • 3 cups green cabbage shredded
  • 2 cups red cabbage shredded
  • 1 cup carrots shredded
  • 2 apples julienned
Dressing
  • 0.25 cup mayo
  • 0.25 cup Greek yogurt
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Add shredded green cabbage, red cabbage, carrots, and apples to a large bowl.
  2. In a separate bowl, whisk together mayo, Greek yogurt, apple cider vinegar, honey, Dijon, salt, and pepper.
  3. Pour dressing over the cabbage mixture.
  4. Toss until everything is evenly coated.
  5. Chill for 10–15 minutes before serving.

Notes

Add cranberries, nuts, or seeds for extra texture. Slice apples right before mixing to prevent browning.
