  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 6 cups green cabbage shredded
  • 10 oz diced tomatoes with green chiles canned
  • 1 tbsp taco seasoning
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper
  • 1 cup cheddar cheese shredded
  • 1-1.5 cups Fritos corn chips lightly crushed
  • 2 tbsp green onions sliced

Method
 

  1. Brown ground beef in a large skillet; drain excess fat.
  2. Add onion and garlic; cook until softened.
  3. Stir in shredded cabbage and cook until it begins to wilt.
  4. Add diced tomatoes, taco seasoning, salt, and pepper. Mix well.
  5. Simmer for 8–10 minutes until cabbage is tender.
  6. Sprinkle cheddar cheese over skillet; cover to melt.
  7. Remove from heat and top with crushed Fritos.
  8. Garnish with green onions and serve warm.

Notes

Add jalapeños for heat or corn for sweetness.
