Ingredients
  

Brownies
  • 1 cup dark chocolate melted
  • 0.5 cup unsalted butter melted
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 0.5 cup all-purpose flour
  • 0.25 cup unsweetened cocoa powder
  • 0.5 tsp salt
  • 1.5 cups zucchini finely grated
  • 0.5 cup chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C). Line 8x8 inch baking pan with parchment paper.
  2. Melt dark chocolate and butter together, stirring until smooth and combined.
  3. Whisk together both sugars, eggs, and vanilla extract until light and fluffy.
  4. Gradually pour melted chocolate mixture into sugar mixture, whisking constantly.
  5. Combine flour, cocoa powder, and salt, then fold into chocolate mixture.
  6. Squeeze excess moisture from grated zucchini, then fold zucchini and chocolate chips into batter.
  7. Pour batter into prepared pan and spread evenly.
  8. Bake 28-32 minutes until toothpick inserted in center comes out with moist crumbs. Cool completely before cutting.

Notes

Squeeze excess moisture from zucchini but don't remove all moisture. Brownies improve in texture after first day. Store covered at room temperature up to 5 days.
