Ingredients
  

Shortbread Cookies
  • 1 cup unsalted butter softened
  • 0.5 cup powdered sugar
  • 1.5 tsp vanilla extract
  • 2 cups all-purpose flour
  • 0.25 tsp salt
  • 0.33 cup rainbow sprinkles jimmies
Frosting
  • 0.5 cup unsalted butter softened
  • 1.5 cups powdered sugar
  • 1 tsp vanilla extract
  • 1-2 tbsp milk or cream

Method
 

  1. Beat butter and powdered sugar until creamy.
  2. Mix in vanilla.
  3. Add flour and salt; mix to form dough.
  4. Fold in rainbow sprinkles.
  5. Shape dough and bake at 350°F (175°C) for 10–12 minutes.
  6. Beat frosting ingredients until fluffy.
  7. Assemble sandwich cookies with frosting.
