Ingredients
  

Stir Fry
  • 4 cups broccoli florets
  • 1 can chickpeas drained and rinsed
  • 4 cloves garlic minced
  • 2 tbsp olive oil
  • 2 tbsp soy sauce or tamari
  • 0.25 cup vegetable broth
  • 1 tsp cornstarch optional
  • 0.25 tsp black pepper

Equipment

  • Large skillet or wok
  • Cutting board
  • Knife
  • Wooden spoon

Method
 

  1. Sauté chickpeas in oil until lightly golden; remove and set aside.
  2. Stir fry broccoli until bright green and tender-crisp.
  3. Add garlic and cook until fragrant.
  4. Return chickpeas to pan and add soy sauce and broth.
  5. Add cornstarch slurry if using and cook until sauce thickens.

Notes

Serve immediately for best texture and color.
