- Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- In a large skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add rice to the skillet and stir to coat with garlic butter. Cook for 2-3 minutes.
- Transfer rice mixture to prepared baking dish. Add chicken broth and water, stirring to combine.
- Season chicken pieces with salt, pepper, thyme, and paprika. Arrange over rice mixture.
- Cover tightly with aluminum foil and bake for 25 minutes.
- Remove foil, sprinkle with cheese, and bake uncovered for 5-10 minutes until chicken reaches 165°F internal temperature.
- Let rest for 5 minutes, garnish with fresh parsley, and serve.
Notes
Store leftovers in refrigerator for up to 4 days. Reheat in oven at 350°F with a splash of chicken broth to prevent drying. Can be frozen for up to 3 months.
