Method
- Pat pork chops dry and season both sides with salt, pepper, and paprika.
- Heat olive oil in a skillet over medium-high heat until shimmering.
- Add pork chops and sear for 3–4 minutes per side until golden brown.
- Reduce heat to medium and add butter, garlic, thyme, and rosemary.
- Tilt the pan and spoon melted butter over the pork chops for 1–2 minutes.
- Cook until internal temperature reaches 145°F (63°C).
- Remove from heat, rest for 5 minutes, and garnish with parsley before serving.
Notes
For extra flavor, add a squeeze of lemon juice just before serving. Bone-in chops add more juiciness and depth of flavor.
