Ingredients
  

  • 4 pork chops 1–1¼ inches thick
  • salt to taste
  • black pepper to taste
  • 1 tsp paprika optional
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1 tbsp fresh parsley chopped, optional

Equipment

  • Cast iron skillet
  • Tongs
  • Meat thermometer

Method
 

  1. Pat pork chops dry and season both sides with salt, pepper, and paprika.
  2. Heat olive oil in a skillet over medium-high heat until shimmering.
  3. Sear pork chops for 3–4 minutes without moving until golden brown.
  4. Flip pork chops and add butter and garlic to the pan.
  5. Baste pork chops with melted garlic butter for 2–3 minutes.
  6. Remove pork chops when internal temperature reaches 145°F (63°C).
  7. Rest for 5 minutes and spoon remaining butter over the top before serving.

Notes

Use thick-cut pork chops for the juiciest results. Avoid overcooking.
