Ingredients
  

Steak Bites
  • 1 lb sirloin steak cut into 1-inch cubes
  • 1.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp olive oil
  • 3 tbsp butter
  • 4 cloves garlic minced
  • 1 tbsp parsley chopped
  • 0.5 tsp smoked paprika optional
Cheesy Smashed Potatoes
  • 1.5 lb baby potatoes
  • 2 tbsp olive oil
  • 3 tbsp butter melted
  • 1 cup cheddar cheese shredded
  • 1 tsp garlic powder
  • salt and pepper to taste
  • 2 tbsp green onions or parsley chopped, for garnish

Equipment

  • Cast iron skillet
  • Saucepan
  • Baking sheet

Method
 

  1. Boil baby potatoes until fork tender, 15–20 minutes.
  2. Smash potatoes on a baking sheet and season with oil, butter, salt, pepper, and garlic powder.
  3. Roast at 425°F for 20 minutes until crispy, add cheese, and bake 5 minutes more.
  4. Pat steak dry, season with salt, pepper, and paprika.
  5. Sear steak cubes in hot oil for 2 minutes per side until browned.
  6. Add butter and garlic, stir until fragrant, then toss steak in garlic butter.
  7. Serve steak bites over cheesy smashed potatoes and garnish with parsley.

Notes

Use a cast iron skillet for the best sear on the steak. Don’t overcook — medium-rare is perfect.
