- Boil baby potatoes until fork tender, 15–20 minutes.
- Smash potatoes on a baking sheet and season with oil, butter, salt, pepper, and garlic powder.
- Roast at 425°F for 20 minutes until crispy, add cheese, and bake 5 minutes more.
- Pat steak dry, season with salt, pepper, and paprika.
- Sear steak cubes in hot oil for 2 minutes per side until browned.
- Add butter and garlic, stir until fragrant, then toss steak in garlic butter.
- Serve steak bites over cheesy smashed potatoes and garnish with parsley.
Notes
Use a cast iron skillet for the best sear on the steak. Don’t overcook — medium-rare is perfect.
