Ingredients
  

Roasted Sweet Potatoes
  • 4 cups sweet potatoes cubed
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 0.5 cup parmesan cheese grated, divided
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp parsley chopped

Method
 

  1. Preheat the oven to 425°F (220°C).
  2. Toss sweet potatoes with olive oil, garlic, salt, pepper, Italian seasoning, and half of the parmesan.
  3. Spread potatoes in a single layer on a baking sheet.
  4. Roast for 28–35 minutes, flipping halfway through cooking.
  5. Sprinkle remaining parmesan over the potatoes while hot.
  6. Top with parsley and serve warm.

Notes

For extra crispiness, avoid overcrowding the baking sheet and roast on parchment-free pan.
