Method
- Preheat the oven to 425°F (220°C).
- Toss sweet potatoes with olive oil, garlic, salt, pepper, Italian seasoning, and half of the parmesan.
- Spread potatoes in a single layer on a baking sheet.
- Roast for 28–35 minutes, flipping halfway through cooking.
- Sprinkle remaining parmesan over the potatoes while hot.
- Top with parsley and serve warm.
Notes
For extra crispiness, avoid overcrowding the baking sheet and roast on parchment-free pan.
