  • 1 sleeve saltine crackers
  • 2 medium ripe tomatoes diced and drained
  • 3 hard-boiled eggs chopped
  • 0.5 cup mayonnaise Duke’s recommended
  • 2 green onions finely sliced
  • salt and black pepper to taste

Equipment

  • Mixing bowl
  • Spoon or spatula
  • Knife and cutting board

Method
 

  1. Dice tomatoes and chop hard-boiled eggs. Drain excess tomato juice.
  2. Crush saltine crackers into pieces, not crumbs.
  3. In a large bowl, combine tomatoes, eggs, green onions, and mayonnaise. Mix gently.
  4. Fold in crushed crackers just before serving.
  5. Season with salt and pepper, garnish with herbs, and serve immediately.

Notes

Mix and serve immediately for the best crunch. Do not refrigerate mixed salad.
