- Dice tomatoes and chop hard-boiled eggs. Drain excess tomato juice.
- Crush saltine crackers into pieces, not crumbs.
- In a large bowl, combine tomatoes, eggs, green onions, and mayonnaise. Mix gently.
- Fold in crushed crackers just before serving.
- Season with salt and pepper, garnish with herbs, and serve immediately.
Notes
