Ingredients
  

Pasta
  • 12 oz rigatoni or penne
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 shallot finely diced
  • 2 cloves garlic minced
  • 0.25 cup tomato paste
  • 0.25 cup vodka
  • 0.5 cup heavy cream
  • 0.25 cup Parmesan cheese freshly grated

Equipment

  • Large pot
  • Skillet
  • Wooden spoon
  • Colander

Method
 

  1. Cook pasta in salted boiling water until al dente. Reserve pasta water.
  2. Sauté shallot and garlic in olive oil and butter.
  3. Add tomato paste and chili flakes; cook until darkened.
  4. Stir in vodka and simmer briefly.
  5. Add heavy cream and simmer until smooth.
  6. Toss pasta with sauce and Parmesan. Adjust with pasta water if needed.

Notes

Cook tomato paste thoroughly for best flavor. Adjust spice level to preference.
