- Heat olive oil in a large pot and sauté onion, garlic, and ginger until fragrant.
- Add sliced chicken and cook until no longer pink.
- Stir in carrots and celery; cook 3 minutes.
- Pour in chicken broth, soy sauce, sesame oil, salt, and pepper; bring to a boil.
- Add noodles and simmer 8–10 minutes until tender.
- Add lime juice and adjust seasoning.
- Serve hot, garnished with cilantro or green onions.
Notes
Add chili flakes for heat or coconut milk for a creamy twist. Great for cold days.
