Ingredients
  

Base
  • 2 tbsp olive oil
  • 1 lb chicken breast or thighs sliced
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 tbsp fresh ginger grated
  • 2 carrots sliced
  • 2 celery stalks sliced
Broth & Seasoning
  • 6 cups chicken broth
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 0.5 tsp black pepper
  • salt to taste
Finish
  • 6 oz egg noodles
  • 1 tbsp lime juice
  • 1 tbsp cilantro or green onions for garnish

Equipment

  • Large pot
  • Cutting board

Method
 

  1. Heat olive oil in a large pot and sauté onion, garlic, and ginger until fragrant.
  2. Add sliced chicken and cook until no longer pink.
  3. Stir in carrots and celery; cook 3 minutes.
  4. Pour in chicken broth, soy sauce, sesame oil, salt, and pepper; bring to a boil.
  5. Add noodles and simmer 8–10 minutes until tender.
  6. Add lime juice and adjust seasoning.
  7. Serve hot, garnished with cilantro or green onions.

Notes

Add chili flakes for heat or coconut milk for a creamy twist. Great for cold days.
