Ingredients
  

Soup Base
  • 1.5 lbs chicken boneless, skinless
  • 1 tbsp olive oil
  • 1 medium onion diced
  • 6 cloves garlic minced
  • 2 tbsp fresh ginger grated
  • 2 medium carrots sliced
  • 2 stalks celery sliced
  • 8 cups chicken broth
  • 6 oz noodles egg or rice noodles

Equipment

  • Large soup pot
  • Cutting board
  • Knife
  • Ladle

Method
 

  1. Sauté onion in oil until softened.
  2. Add garlic and ginger; cook until fragrant.
  3. Add vegetables, chicken, and broth.
  4. Simmer until chicken is cooked.
  5. Shred chicken and return to pot.
  6. Add noodles and cook until tender.

Notes

For best storage, keep noodles separate until serving.
