Ingredients
  

  • 3 cups gluten-free all-purpose flour with xanthan gum
  • 1.5 cups warm water
  • 2.25 tsp active dry yeast
  • 1.5 tsp salt
  • 2 tbsp olive oil
  • 1 tbsp honey or maple syrup optional
  • 1 tbsp apple cider vinegar

Method
 

  1. Mix gluten-free flour and salt in a large bowl.
  2. Combine warm water, yeast, and honey. Let foam for 5 minutes.
  3. Add yeast mixture, olive oil, and vinegar to flour. Stir until sticky dough forms.
  4. Cover and let rise 2–3 hours at room temperature.
  5. Preheat oven to 450°F (230°C) with Dutch oven inside.
  6. Shape dough with wet hands and transfer to parchment paper.
  7. Bake covered 35 minutes, uncover and bake 10–15 minutes more.
  8. Cool completely before slicing.

Notes

Use a gluten-free flour blend containing xanthan gum for best texture.
