Ingredients
  

  • 1.5 lb chicken breasts boneless, skinless
  • 3 tbsp olive oil
  • 3 tbsp lemon juice fresh
  • 3 cloves garlic minced
  • 1.5 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 cups cooked rice
  • 1 cup cherry tomatoes halved
  • 1 cucumber chopped
  • 0.5 cup kalamata olives pitted
  • 0.5 cup tzatziki sauce

Equipment

  • Mixing bowl
  • Skillet or grill pan
  • Cutting board

Method
 

  1. Whisk olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Marinate chicken for at least 20 minutes.
  3. Cook chicken in a skillet or grill pan until cooked through.
  4. Rest chicken, then slice into strips.
  5. Assemble bowls with rice, chicken, vegetables, olives, and tzatziki.
  6. Garnish and serve immediately.

Notes

Serve with extra lemon wedges and herbs for freshness.
