Ingredients
  

Burrito Filling
  • 4 large flour tortillas burrito size
  • 2 cups sharp cheddar cheese shredded
  • 1.5 cups mozzarella cheese shredded
  • 0.5 cup Monterey Jack cheese shredded
  • 4 oz cream cheese softened
Seasonings
  • 4 tbsp butter softened
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp smoked paprika
  • 0.25 tsp cayenne pepper optional
  • salt and pepper to taste
  • 2 tbsp fresh chives optional

Equipment

  • Large skillet or griddle
  • Mixing bowl
  • Spatula

Method
 

  1. Mix all shredded cheeses with softened cream cheese in a large bowl until well combined.
  2. Season cheese mixture with garlic powder, onion powder, smoked paprika, cayenne, salt and pepper.
  3. Divide cheese mixture among tortillas, placing in center line leaving 2 inches on sides.
  4. Fold in sides of tortillas, then roll tightly from bottom to seal completely.
  5. Heat skillet over medium heat. Butter outside of burritos, especially seam side.
  6. Place burritos seam-side down in hot skillet. Cook 3-4 minutes without moving.
  7. Flip carefully and cook another 3-4 minutes. Press gently with spatula for even browning.
  8. Rotate to crisp any pale spots, cooking 1-2 minutes more per side as needed.
  9. Rest 1 minute before cutting diagonally. Serve immediately while cheese is molten.

Notes

For extra flavor, try adding crispy bacon, caramelized onions, or jalapeƱos. Serve with salsa, sour cream, or tomato soup for dipping. Best enjoyed immediately while cheese is still stretchy.
