  • 0.5 cup bell peppers diced
  • 0.25 cup spinach chopped, optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease muffin tin.
  2. Whisk eggs and milk until smooth.
  3. Stir in ham, cheese, vegetables, salt, and pepper.
  4. Pour into muffin cups, filling ¾ full.
  5. Bake 18–22 minutes until set.
  6. Cool slightly, remove, and serve or store.
