- Preheat oven to 350°F (175°C) and grease muffin tin.
- Whisk eggs and milk until smooth.
- Stir in ham, cheese, vegetables, salt, and pepper.
- Pour into muffin cups, filling ¾ full.
- Bake 18–22 minutes until set.
- Cool slightly, remove, and serve or store.
