- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk together flour, baking powder, baking soda, and salt.
- Cream butter and sugars until light and fluffy.
- Mix in egg, vanilla extract, and butter extract.
- Gradually add dry ingredients to form a soft dough.
- Fold in butterscotch chips.
- Scoop dough onto baking sheets, spacing evenly.
- Bake 10–12 minutes until edges are set.
Notes
For extra chewiness, slightly underbake and cool on the pan.
