  • 3 bananas ripe and mashed
  • 1 cup strawberries diced
  • 0.5 cup Greek yogurt
  • 2 eggs
  • 0.33 cup honey or maple syrup
  • 0.25 cup olive oil
  • 1.5 cups whole wheat flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt

Method
 

  1. Preheat oven to 350°F (175°C) and prepare loaf pan.
  2. Mash bananas and mix with yogurt, eggs, sweetener, oil, and vanilla.
  3. Whisk dry ingredients separately.
  4. Combine wet and dry ingredients gently.
  5. Fold in strawberries.
  6. Bake 50–60 minutes until toothpick comes out clean.
  7. Cool before slicing and serving.

Notes

Use very ripe bananas for best sweetness and moisture.
