- Heat olive oil in large skillet over medium-high heat. Season ground beef with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Add seasoned ground beef to heated skillet, breaking up with wooden spoon. Cook 8-10 minutes until fully browned and cooked through.
- While beef cooks, prepare special sauce by combining Greek yogurt, mayonnaise, mashed avocado, ketchup, mustard, pickle juice, and seasonings. Whisk until smooth.
- Wash and chop vegetables. Arrange mixed greens in serving bowls as base layer.
- Remove cooked ground beef from heat and let cool slightly.
- Divide cooked ground beef among prepared bowls, placing over mixed greens.
- Arrange diced tomatoes, cucumber slices, and red onion around each bowl in separate sections.
- Sprinkle shredded cheese over warm ground beef, allowing it to melt slightly.
- Drizzle special sauce generously over each bowl and add optional toppings. Serve immediately.
