  • 2 chicken breasts whole or sliced
  • 2 zucchini sliced into rounds
  • 2 yellow squash sliced into rounds
  • 2 tbsp olive oil
  • 2 cloves garlic minced
Seasonings
  • 1 tsp Italian seasoning
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 0.5 lemon juiced

Method
 

  1. Season chicken breasts with salt, pepper, paprika, garlic powder, and half the Italian seasoning.
  2. Heat 1 tablespoon olive oil in a skillet over medium-high heat and sear chicken until golden and cooked through.
  3. Remove chicken and set aside.
  4. Add remaining olive oil to the same skillet, then sauté garlic for 30 seconds.
  5. Add zucchini and squash, season with remaining Italian seasoning, salt, and pepper, and cook until tender.
  6. Slice cooked chicken and return to skillet.
  7. Squeeze lemon juice over everything and toss together.
  8. Garnish with parsley and serve warm.

Notes

Add Parmesan or red pepper flakes for extra flavor.
