Method
- Season chicken breasts with salt, pepper, paprika, garlic powder, and half the Italian seasoning.
- Heat 1 tablespoon olive oil in a skillet over medium-high heat and sear chicken until golden and cooked through.
- Remove chicken and set aside.
- Add remaining olive oil to the same skillet, then sauté garlic for 30 seconds.
- Add zucchini and squash, season with remaining Italian seasoning, salt, and pepper, and cook until tender.
- Slice cooked chicken and return to skillet.
- Squeeze lemon juice over everything and toss together.
- Garnish with parsley and serve warm.

Add Parmesan or red pepper flakes for extra flavor.
