Ingredients
  

Cookie Batter
  • 2 ripe bananas mashed
  • 1 egg large
  • 1 tsp vanilla extract
  • 1.5 cups rolled oats
  • 0.5 cup almond flour
  • 0.5 tsp cinnamon
  • 0.25 tsp salt
Optional Mix-ins
  • 0.33 cup chopped walnuts or pecans optional
  • 0.25 cup unsweetened shredded coconut optional
  • sugar-free chocolate chips optional

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheet with parchment paper.
  2. Mash bananas in a mixing bowl until smooth.
  3. Add egg and vanilla and mix well.
  4. Stir in oats, almond flour, cinnamon, and salt until dough forms.
  5. Fold in optional nuts, coconut, or sugar-free chocolate chips.
  6. Scoop dough onto baking sheet and flatten slightly.
  7. Bake 12–15 minutes or until edges are lightly golden.
  8. Cool on baking sheet for 5 minutes, then transfer to wire rack.

Notes

Use very ripe bananas for maximum sweetness. Do not overbake.
