Ingredients
  

Main
  • 1 cup quinoa rinsed
  • 1.5 cups lentils cooked
  • 2 cups spinach chopped
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 cup diced tomatoes
  • 1 tsp oregano
  • 1 tsp paprika
  • 0.5 tsp cumin
  • 0.75 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 2 cups vegetable broth
  • 1 cup cheese optional

Method
 

  1. Preheat oven to 375°F and grease baking dish.
  2. Cook onion in olive oil until soft, add garlic.
  3. Add spinach and cook until wilted.
  4. Mix in lentils, tomatoes, spices.
  5. Add quinoa and broth, stir well.
  6. Transfer to baking dish, top with cheese.
  7. Bake covered 25 minutes, uncover and bake 15 more.
