- Preheat oven to 375°F and grease baking dish.
- Cook onion in olive oil until soft, add garlic.
- Add spinach and cook until wilted.
- Mix in lentils, tomatoes, spices.
- Add quinoa and broth, stir well.
- Transfer to baking dish, top with cheese.
- Bake covered 25 minutes, uncover and bake 15 more.
