Ingredients
  

Main
  • 2 chicken breasts cut into pieces
  • 2 cups cooked rice
  • 1 cup broccoli
  • 1 cup carrots shredded
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp ginger grated
  • 0.25 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch

Equipment

  • Mixing bowls

Method
 

  1. Cook chicken in skillet until browned and cooked through.
  2. Sauté garlic and ginger until fragrant.
  3. Add soy sauce, honey, and vinegar and simmer.
  4. Stir in cornstarch slurry until thickened.
  5. Return chicken and coat in sauce.
  6. Serve over rice with vegetables and garnish.

Notes

Add chili flakes for spice or swap rice for cauliflower rice for low-carb option.
