Ingredients
  

Chicken
  • 4 boneless skinless chicken breasts 6-8 oz each
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup panko breadcrumbs
  • 2 tbsp fresh parsley finely chopped
  • 1 tbsp fresh thyme leaves
  • 1 tbsp fresh rosemary minced
  • 3 garlic cloves minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 0.25 tsp red pepper flakes optional
Coating
  • 2 tbsp butter melted
  • 1 tbsp lemon juice
  • 1 tsp Italian seasoning

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat chicken breasts dry and pound to even 3/4 inch thickness between plastic wrap.
  3. Combine Parmesan, breadcrumbs, herbs, garlic, salt, pepper, paprika, and red pepper flakes in a bowl.
  4. Whisk together melted butter, lemon juice, and Italian seasoning in a separate bowl.
  5. Brush chicken breasts with butter mixture on all surfaces.
  6. Press herb and cheese mixture firmly onto both sides of each chicken breast.
  7. Drizzle with olive oil and place on prepared baking sheet.
  8. Bake 20-25 minutes until internal temperature reaches 165°F and coating is golden brown.
  9. Rest for 5 minutes before serving to allow juices to redistribute.
  10. Garnish with fresh herbs and serve with your favorite side dishes.

Notes

For extra flavor, marinate chicken in buttermilk for 2-4 hours before coating. Avoid overcrowding the baking sheet for proper browning. Store leftovers in refrigerator for up to 3 days.
