  • 2 cups egg whites
  • 0.5 cup spinach chopped
  • 0.33 cup red bell pepper diced
  • 0.33 cup onion diced
  • 0.5 cup shredded cheese
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp garlic powder

Method
 

  1. Preheat oven to 350°F (175°C) and grease a muffin tin.
  2. Whisk egg whites with salt, pepper, and garlic powder.
  3. Distribute vegetables and cheese evenly into muffin cups.
  4. Pour egg mixture over fillings until 3/4 full.
  5. Bake for 18–22 minutes until set.
  6. Cool slightly, remove from pan, and serve or store.

Notes

Use silicone molds for best results. Add protein like turkey or chicken for variation.
