  • 2 chicken breasts boneless, skinless
  • 8 oz pasta penne or fettuccine
  • 2 tbsp olive oil
  • 1 tbsp Cajun seasoning divided
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 3 cloves garlic minced
  • 1.5 cups heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup Parmesan cheese freshly grated
  • 1 tbsp butter

Equipment

Method
 

  1. Cook pasta until al dente and reserve pasta water.
  2. Season and sear chicken until cooked through, then slice.
  3. Sauté peppers and garlic in the same skillet.
  4. Add broth and cream, then simmer gently.
  5. Stir in Parmesan until smooth.
  6. Combine pasta and chicken with sauce and toss well.

Notes

Adjust Cajun seasoning to control spice level.
