Method
- Heat olive oil and butter in a large pot over medium heat.
- Add onion and cook until soft and translucent.
- Add garlic and tomato paste, cooking briefly until fragrant.
- Add tomatoes and broth. Season and bring to a simmer.
- Simmer for 20–25 minutes.
- Blend until smooth.
- Stir in cream and adjust seasoning.
Notes
For freezing, omit cream and add after reheating.
