Ingredients
  

  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 yellow onion chopped
  • 3 cloves garlic minced
  • 28 oz canned tomatoes
  • 2 tbsp tomato paste
  • 2 cups broth
  • 0.5 cup heavy cream
  • 1 tsp salt to taste
  • 0.5 tsp black pepper

Equipment

  • Large pot
  • Wooden spoon
  • Immersion blender or blender

Method
 

  1. Heat olive oil and butter in a large pot over medium heat.
  2. Add onion and cook until soft and translucent.
  3. Add garlic and tomato paste, cooking briefly until fragrant.
  4. Add tomatoes and broth. Season and bring to a simmer.
  5. Simmer for 20–25 minutes.
  6. Blend until smooth.
  7. Stir in cream and adjust seasoning.

Notes

For freezing, omit cream and add after reheating.
