Homemade Gyros

Tender seasoned gyro meat served in warm pita with tzatziki, tomatoes, and onions.

Ingredients
  

Gyro Meat
  • 1 lb ground beef or lamb
  • 1 small onion grated
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
Tzatziki
  • 1 cup Greek yogurt
  • 1/2 cucumber grated and squeezed
  • 1 clove garlic minced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp fresh dill optional
  • salt and pepper to taste
For Serving
  • pita bread warmed
  • tomatoes sliced
  • red onions sliced

Equipment

  • Loaf pan
  • Mixing bowls
  • Skillet

Method
 

  1. Mix ground meat, grated onion, garlic, spices, salt, pepper, and olive oil.
  2. Press tightly into a loaf pan and bake at 350°F (175°C) for 45–55 minutes.
  3. Let cool, then refrigerate for 1–2 hours before slicing.
  4. Sear sliced meat in a hot skillet until crisp on edges.
  5. Mix tzatziki ingredients and chill.
  6. Assemble gyros with pita, meat, tomatoes, onions, and tzatziki.

Notes

Use a mix of lamb and beef for classic flavor.
