Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup creamy peanut butter
  • 0.5 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
Filling
  • 0.5 cup unsalted butter softened
  • 0.5 cup creamy peanut butter
  • 1.5 cups powdered sugar
  • 1 tsp vanilla extract
  • 2-3 tbsp milk or cream

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, and salt in a bowl.
  3. Cream butter, peanut butter, and sugars until light and fluffy. Add egg and vanilla.
  4. Mix in dry ingredients until a soft dough forms.
  5. Shape dough into peanut-like ovals and place on baking sheet.
  6. Press crisscross marks with a fork.
  7. Bake 10–12 minutes. Cool completely.
  8. Beat filling ingredients until smooth and creamy.
  9. Sandwich cookies with filling and serve.

Notes

Do not overbake; cookies should remain soft for sandwiching.
