- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk together flour, baking soda, and salt in a bowl.
- Cream butter, peanut butter, and sugars until light and fluffy. Add egg and vanilla.

- Shape dough into peanut-like ovals and place on baking sheet.
- Press crisscross marks with a fork.
- Bake 10–12 minutes. Cool completely.
- Beat filling ingredients until smooth and creamy.
- Sandwich cookies with filling and serve.
