- Wash and peel the peaches, then remove pits and cut into chunks. Place peach pieces in a blender with 1/4 cup sugar and 2 tablespoons water.
- Blend the peach mixture until completely smooth and creamy, creating a vibrant peach puree. Strain through fine-mesh sieve if you prefer a completely smooth texture.
- In a large pitcher, combine fresh lemon juice with remaining 3/4 cup sugar, stirring vigorously until sugar completely dissolves.
- Add the peach puree to the lemon mixture, stirring well to combine all flavors evenly.
- Pour in cold water and mix thoroughly, then add ice cubes to chill the mixture immediately.
- Taste and adjust sweetness by adding more sugar if desired, or thin with additional water for milder flavor.
- Chill in refrigerator for at least 30 minutes to allow flavors to meld and develop fully.
- Serve over ice in tall glasses, garnishing each serving with fresh peach slices and mint sprigs for beautiful presentation.
Notes
Use ripe, fragrant peaches for best flavor. Can be made 1 day ahead and stored in refrigerator. Add vodka or gin for adult version. Freeze peach puree in ice cube trays for quick future batches.
