Strawberry Syrup
  • 2 cups fresh strawberries hulled and chopped
  • 1 cup granulated sugar
  • 1 cup water
  • 2 tbsp fresh lemon juice
For Serving
  • club soda or sparkling water
  • ice cubes
  • fresh strawberries for garnish
  • fresh mint leaves optional

Equipment

  • Medium saucepan
  • Fine-mesh sieve
  • Mixing bowl
  • Tall glasses

Method

  1. Combine chopped strawberries, sugar, and water in a medium saucepan over medium heat, stirring until sugar dissolves.
  2. Reduce heat to low and simmer gently for 15-20 minutes until strawberries break down and release their juices.
  3. Remove from heat and let cool for 10 minutes, then strain through fine-mesh sieve into a clean bowl, pressing solids to extract all liquid.
  4. Stir in fresh lemon juice and refrigerate syrup until completely chilled, at least 2 hours.
  5. To serve, fill tall glasses with ice cubes and add 3-4 tablespoons of strawberry syrup per glass.
  6. Slowly pour club soda or sparkling water over ice to fill glass.
  7. Gently stir once or twice to blend slightly while maintaining carbonation.
  8. Garnish with fresh strawberry slices and mint if desired, serve immediately.

Notes

Strawberry syrup can be stored in an airtight container in the refrigerator for up to 2 weeks. Adjust sweetness by adding more or less syrup to each glass. For adult version, add a splash of vodka or rum.
