- Combine chopped strawberries, sugar, and water in a medium saucepan over medium heat, stirring until sugar dissolves.
- Reduce heat to low and simmer gently for 15-20 minutes until strawberries break down and release their juices.
- Remove from heat and let cool for 10 minutes, then strain through fine-mesh sieve into a clean bowl, pressing solids to extract all liquid.
- Stir in fresh lemon juice and refrigerate syrup until completely chilled, at least 2 hours.
- To serve, fill tall glasses with ice cubes and add 3-4 tablespoons of strawberry syrup per glass.
- Slowly pour club soda or sparkling water over ice to fill glass.
- Gently stir once or twice to blend slightly while maintaining carbonation.
- Garnish with fresh strawberry slices and mint if desired, serve immediately.
Notes
Strawberry syrup can be stored in an airtight container in the refrigerator for up to 2 weeks. Adjust sweetness by adding more or less syrup to each glass. For adult version, add a splash of vodka or rum.
