Ingredients
  

For the Chicken and Rice
  • 2 tbsp olive oil
  • 1.5 lb chicken breasts cut into chunks
  • salt and pepper to taste
  • 1 cup long-grain white rice
  • 2 cups chicken broth low-sodium
  • 1 tbsp butter optional
For the Honey Mustard Sauce
  • 0.25 cup Dijon mustard
  • 2 tbsp whole-grain mustard
  • 0.33 cup honey
  • 2 cloves garlic minced
  • 1 tsp paprika optional
  • 1 tsp soy sauce or Worcestershire sauce
  • 0.5 tsp salt
  • 0.25 tsp black pepper
To Finish
  • fresh parsley for garnish
  • lemon wedges optional

Method
 

  1. Whisk together the honey mustard sauce ingredients in a bowl.
  2. Sear the chicken in olive oil until lightly golden; remove and set aside.
  3. Toast the rice in the same pan for 1–2 minutes.
  4. Add broth and honey mustard sauce; stir well.
  5. Return chicken to the pan; cover and simmer 18–20 minutes until rice is tender.
  6. Fluff rice, stir in butter, and garnish with parsley and lemon.

Notes

Add more honey or mustard to balance sweetness or tang.
