- In a medium bowl, whisk together cornmeal, flour, baking powder, baking soda, salt, and sugar.
- In another bowl, beat egg with buttermilk and melted butter until combined.
- Combine wet and dry ingredients, stirring gently until just mixed.
- Fold in scallions and optional diced onion.
- Heat oil in a saucepan or deep fryer to 350°F (175°C).
- Drop tablespoon-sized portions of batter into hot oil. Fry 2–3 minutes per side until golden.
- Remove with slotted spoon and drain on paper towels. Serve warm.
Notes
Batter can be made ahead and refrigerated. Reheat in oven to maintain crispiness.
