- Preheat oven to 375°F (190°C) and grease a baking dish.
- Blanch green beans in salted water until crisp-tender; drain and cool.
- Fry shallots in oil until golden; drain on paper towels.
- Sauté mushrooms in butter until browned.
- Sprinkle flour over mushrooms and cook briefly.
- Whisk in milk and cream; simmer until thickened.
- Season sauce with thyme, salt, and pepper.
- Fold green beans into sauce and transfer to baking dish.
- Top with fried shallots and bake until bubbly.

Add shallots just before baking if making ahead.
