Ingredients
  

  • 1.5 lb fresh green beans trimmed
  • 2 tbsp olive oil
  • 3 shallots thinly sliced
  • 8 oz mushrooms sliced
  • 3 tbsp butter
  • 3 tbsp flour
  • 1 cup whole milk
  • 0.5 cup heavy cream
  • 1 tsp fresh thyme chopped
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Blanch green beans in salted water until crisp-tender; drain and cool.
  3. Fry shallots in oil until golden; drain on paper towels.
  4. Sauté mushrooms in butter until browned.
  5. Sprinkle flour over mushrooms and cook briefly.
  6. Whisk in milk and cream; simmer until thickened.
  7. Season sauce with thyme, salt, and pepper.
  8. Fold green beans into sauce and transfer to baking dish.
  9. Top with fried shallots and bake until bubbly.

Notes

Add shallots just before baking if making ahead.
