Ingredients
  

Main
  • 3-4 lbs corned beef brisket with spice packet
  • 4 cups water or beef broth
  • 1 onion quartered
  • 3 cloves garlic smashed
  • 4 carrots cut into chunks
  • 1 lb baby potatoes
  • 1 cabbage cut into wedges

Method
 

  1. Add broth and trivet to Instant Pot.
  2. Place brisket on trivet and add spice packet.
  3. Add onion and garlic.
  4. Cook on high pressure 70–90 minutes.
  5. Natural release 15 minutes, then release remaining pressure.
  6. Remove brisket and rest.
  7. Cook vegetables on high pressure 3–5 minutes.
  8. Slice beef and serve with vegetables.

Notes

Slice against the grain for maximum tenderness. Use broth for richer flavor.
