Ingredients
  

Main Mixture
  • 1 lb ground beef
  • 1 cup whole kernel corn drained if canned
  • 1 cup shredded cheddar cheese
  • 0.5 cup chopped green onions
  • 2 eggs large
  • 0.33 cup milk
  • 1.5 cups biscuit baking mix like Bisquick
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp smoked paprika
  • 0.25 tsp cayenne pepper optional
  • to taste salt and pepper

Method
 

  1. Preheat oven to 375°F (190°C) and grease a mini muffin pan.
  2. Brown ground beef in a skillet; drain excess fat.
  3. Add corn, onions, and seasonings. Cook for 2–3 minutes, then cool.
  4. Whisk eggs and milk in a bowl; add biscuit mix to form batter.
  5. Stir in the beef mixture and shredded cheese until combined.
  6. Spoon mixture into mini muffin cups, filling nearly full.
  7. Bake for 15–18 minutes until golden and firm. Cool 5 minutes before serving.

Notes

Perfect for parties and can be made ahead and reheated in the oven or air fryer.
