- Preheat oven to 375°F (190°C) and grease a mini muffin pan.
- Brown ground beef in a skillet; drain excess fat.
- Add corn, onions, and seasonings. Cook for 2–3 minutes, then cool.
- Whisk eggs and milk in a bowl; add biscuit mix to form batter.
- Stir in the beef mixture and shredded cheese until combined.
- Spoon mixture into mini muffin cups, filling nearly full.
- Bake for 15–18 minutes until golden and firm. Cool 5 minutes before serving.
