Ingredients
  

Irish Stew
  • 2 lb beef or lamb cut into chunks
  • 1 onion chopped
  • 3 carrots sliced
  • 3 potatoes chunked
  • 3 cloves garlic minced
  • 4 cups beef or lamb stock
Mashed Potatoes
  • 2 lb potatoes peeled and cubed
  • 4 tbsp butter
  • 0.5 cup milk warm

Equipment

  • Dutch oven or large pot
  • Cutting board
  • Chef's knife
  • Potato masher

Method
 

  1. Brown seasoned meat in olive oil and set aside.
  2. Sauté onion and carrots until softened, then add garlic.
  3. Return meat to pot, add potatoes, stock, herbs, and simmer until tender.
  4. Boil potatoes for mash until fork-tender, then mash with butter and milk.
  5. Serve stew hot over creamy mashed potatoes.

Notes

Stew flavor improves when made a day ahead.
