Ingredients
  

Vegetable Stew Base
  • 4 cups potatoes peeled and chunked
  • 2 carrots sliced
  • 2 parsnips sliced
  • 1 cup mushrooms sliced
  • 1 onion chopped
  • 1 leek sliced
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 bay leaf

Equipment

  • Large pot or Dutch oven
  • Cutting board
  • Knife
  • Wooden spoon

Method
 

  1. Sauté onion and leeks in oil until softened.
  2. Add garlic and mushrooms and cook until fragrant.
  3. Add vegetables, broth, herbs, salt, and pepper.
  4. Simmer gently until vegetables are tender and stew thickens.
  5. Remove bay leaf, adjust seasoning, and serve hot.

Notes

Stew thickens naturally as potatoes break down; add extra broth if needed.
