Ingredients
  

Cookie Dough
  • 2.25 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 1 cup granulated sugar
  • 0.25 cup brown sugar
  • 1 egg large
  • 1 egg yolk
  • 2 tsp vanilla extract

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets.
  2. Whisk flour, baking soda, and salt.
  3. Cream butter and sugars.
  4. Add egg, yolk, and vanilla.
  5. Combine dry ingredients.
  6. Shape dough and bake 10–12 minutes.
  7. Cool, sprinkle sugar, and caramelize with torch.

Notes

Brûlée just before serving for best crackly texture.
