Ingredients
  

Apple Filling
  • 2 apples peeled and diced small
  • 2 tbsp butter
  • 0.25 cup brown sugar
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 tsp vanilla extract
  • 1 tsp cornstarch to thicken
Cookie Dough
  • 0.75 cup unsalted butter softened
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.25 tsp salt
Topping
  • 0.5 cup caramel sauce
  • flaky sea salt for finishing

Method
 

  1. Cook diced apples with butter, sugar, cinnamon, nutmeg, and vanilla until softened.
  2. Stir in cornstarch and cook until thickened. Cool completely.
  3. Cream butter and sugars. Mix in egg and vanilla.
  4. Add flour, baking powder, and salt to form cookie dough.
  5. Shape dough into balls, flatten slightly, and create small indentations in the center.
  6. Fill each indentation with cooled apple filling.
  7. Bake at 350°F (175°C) for 10–12 minutes until edges are set.
  8. Drizzle with caramel and finish with flaky sea salt.

Notes

Let the apple filling cool completely to prevent melting the cookie dough.
