Ingredients
  

Chocolate Cookies
  • 2 cups all-purpose flour
  • 0.5 cup cocoa powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1 egg
  • 2 tsp vanilla extract
  • 1 cup buttermilk
Cream Filling
  • 0.75 cup unsalted butter softened
  • 1.5 cups powdered sugar
  • 1.5 cups marshmallow fluff
  • 1 tsp vanilla extract
  • 1-2 tbsp heavy cream or milk as needed for consistency

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together flour, cocoa powder, baking soda, and salt.
  3. Beat butter and brown sugar until fluffy. Add egg and vanilla.
  4. Add dry ingredients alternately with buttermilk, mixing until combined.
  5. Scoop tablespoons of batter onto baking sheets and bake 8–10 minutes until set.
  6. Cool completely before filling.
  7. Beat butter and powdered sugar. Mix in marshmallow fluff, vanilla, and cream until fluffy.
  8. Pipe or spread filling onto one cookie and top with another to form a sandwich.

Notes

Whoopie pies taste even better on day two. Store in an airtight container.
