Ingredients
  

  • 12 oz bow tie pasta
  • 1.5 cups cherry tomatoes halved
  • 1 cup cucumber diced
  • 0.5 cup red onion thinly sliced
  • 0.5 cup olives sliced
  • 1 cup mozzarella pearls
  • 0.25 cup olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp dried oregano
  • 1 garlic clove minced
  • salt to taste
  • black pepper to taste

Equipment

  • Large pot
  • Colander
  • Large mixing bowl

Method
 

  1. Cook bow tie pasta in salted boiling water until al dente. Drain and cool.
  2. Prepare vegetables and place in a large bowl.
  3. Whisk olive oil, vinegar, mustard, garlic, oregano, salt, and pepper.
  4. Add pasta, mozzarella, and herbs to the bowl.
  5. Pour dressing over salad and toss gently.
  6. Rest 15 minutes, adjust seasoning, and serve.

Notes

Best served slightly chilled or at room temperature.
