Ingredients
  

Pasta Salad
  • 12 oz bow tie pasta
  • 1 cup cherry tomatoes halved
  • 1 cup mozzarella pearls
  • 1 cup cucumber diced
  • 0.33 cup black olives sliced
  • 0.25 cup red onion thinly sliced
  • 0.25 cup fresh basil chopped
Dressing
  • 0.33 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp Italian seasoning
  • 0.5 tsp garlic powder
  • salt and pepper to taste

Equipment

  • Large pot
  • Colander
  • Mixing bowl
  • Whisk

Method
 

  1. Cook pasta until al dente, drain and cool.
  2. Whisk dressing ingredients together.
  3. Combine pasta with vegetables and mozzarella.
  4. Pour dressing over salad and toss gently.
  5. Chill at least 30 minutes before serving.

Notes

For best flavor, refrigerate several hours before serving. Add extra olive oil if needed before serving.
