  • 1 lb Italian sausage mild or spicy
  • 1 tbsp olive oil
  • 1 onion diced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 4 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.5 tsp crushed red pepper flakes optional
  • 1 bay leaf
  • 4 cups chicken broth
  • 14.5 oz crushed tomatoes
  • 30 oz cannellini beans drained and rinsed
  • 1 cup spinach or kale optional
  • 0.25 cup grated Parmesan
  • salt and pepper to taste
  • fresh parsley for garnish

Method
 

  1. Brown sausage in a large pot with olive oil, breaking it into small pieces.
  2. Add onion, carrots, and celery; sauté until softened.
  3. Stir in garlic, oregano, basil, pepper flakes, and bay leaf; cook 1 minute.
  4. Add chicken broth and crushed tomatoes, stirring well.
  5. Add cannellini beans and bring to a simmer.
  6. Simmer 20–25 minutes to develop flavor.
  7. Stir in spinach or kale until wilted.
  8. Add grated Parmesan and stir until melted.
  9. Season with salt and pepper to taste and serve with parsley garnish.

Notes

For a creamier texture, mash a small portion of beans before adding.
