- Brown sausage in a large pot with olive oil, breaking it into small pieces.
- Add onion, carrots, and celery; sauté until softened.
- Stir in garlic, oregano, basil, pepper flakes, and bay leaf; cook 1 minute.
- Add chicken broth and crushed tomatoes, stirring well.
- Add cannellini beans and bring to a simmer.
- Simmer 20–25 minutes to develop flavor.
- Stir in spinach or kale until wilted.
- Add grated Parmesan and stir until melted.
- Season with salt and pepper to taste and serve with parsley garnish.

For a creamier texture, mash a small portion of beans before adding.
