Main
  • 12 oz pasta
  • 2 zucchini
  • 3 cloves garlic
  • 0.25 cup olive oil
  • 0.5 cup parmesan cheese
  • 1 cup basil fresh
  • 0.25 cup parsley fresh
  • 2 tbsp lemon juice
  • 0.5 cup pasta water reserved

Equipment

  • Large pot
  • Skillet
  • Blender or food processor
  • Colander

Method
 

  1. Cook pasta and reserve water.
  2. Cook zucchini in olive oil until tender.
  3. Add garlic and cook briefly.
  4. Blend with herbs and lemon juice.
  5. Return sauce to pan and add pasta.
  6. Add pasta water and cheese, mix well.

Notes

Best served fresh with extra herbs and cheese.
