Ingredients
  

Cauliflower Base
  • 1 head cauliflower cut into florets
Creamy Popper Sauce
  • 8 oz cream cheese softened
  • 0.5 cup sour cream
  • 1 cup cheddar cheese shredded
  • 1 cup Monterey Jack or Pepper Jack shredded
  • 3-4 jalapeños diced
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
Toppings
  • 4 slices bacon cooked and crumbled
  • jalapeño slices for topping
  • 2 green onions sliced

Equipment

  • Baking dish
  • Mixing bowl
  • Skillet or microwave for cauliflower
  • Cutting board

Method
 

  1. Cut cauliflower into florets and steam or microwave until tender. Drain well.
  2. Preheat oven to 375°F (190°C) and grease baking dish.
  3. Mix cream cheese, sour cream, cheddar, Monterey Jack, garlic powder, onion powder, smoked paprika, salt, and pepper.
  4. Stir in diced jalapeños and cauliflower until coated.
  5. Spread mixture into baking dish and top with extra cheese and jalapeño slices.
  6. Bake 25–30 minutes until bubbly and golden.
  7. Add bacon and bake 3–5 minutes more.
  8. Garnish with green onions and serve hot.

Notes

For extra spice, add a serrano pepper or increase jalapeños.
