Ingredients
  

  • 4 slices white bread or sourdough
  • 2 tbsp unsalted butter softened
  • 4 tbsp cream cheese softened
  • 1 cup sharp cheddar cheese shredded
  • 2-3 fresh jalapeños sliced into thin rounds
  • salt to taste
  • garlic powder optional
  • onion powder optional

  • Skillet or griddle
  • Spatula

Method
 

  1. Remove jalapeño seeds if you prefer less heat, then slice peppers into thin rounds and set aside.
  2. Spread softened butter on one side of each bread slice, covering entire surface evenly.
  3. Flip bread slices over so buttered side is down, then spread cream cheese on unbuttered side of two slices.
  4. Layer shredded cheddar cheese over cream cheese, distributing evenly.
  5. Arrange jalapeño slices on top of cheddar cheese, spacing evenly.
  6. Place remaining bread slices on top with buttered side facing up.
  7. Heat large skillet over medium heat for about one minute.
  8. Place sandwiches in skillet and cook 3-4 minutes until bottom is golden brown.
  9. Flip sandwiches carefully, pressing down gently, and cook 3-4 minutes until golden and cheese is melted.
  10. Remove from heat, let rest one minute, slice diagonally and serve immediately.

Notes

For less spice, remove all jalapeño seeds and membranes. Add crispy bacon for extra flavor. Use pepper jack cheese for more heat. Best served immediately while cheese is melty.
